      Renowned chef Peter Gordon has never been afraid to push the boundaries of fine dining, but his latest collaboration with chip-brand Delisio is set to take his famous fusion cuisine in a whole new direction.

      The chef has launched a series of private dining events – called The Delisio Degustation - offering a three-course fine dining experience integrating the flavour profiles of the new Delisio Restaurant Series range.

      Hosted at Homeland, guests will embark on a culinary journey that showcases the versatility and delicacy of the Restaurant Series chips. The carefully crafted menu features three sumptuous courses, one course championing each flavour, thoughtfully paired with drinks to complement the unique tapestry of flavours in each dish. 

      Attendees will enjoy:

      • Entrée: Salmon and trevally sashimi with yuzu ponzu, sea grapes, coconut, sesame and crisp chicken skin; fused with a Delisio Yakitori Chicken & Shallots where the chip acts as a scoop for the sashimi.  Veg: Tofu and pumpkin, yuzu ponzu, sea grapes, coconut, sesame. This dish will be paired with Citizen beer or Sawmill Bare Beer (0.5%ABV)
      • Main: Spiced venison ragout doughnut with crunchy capers, jalapeño mayonnaise and mushroom truffle pâté; fused with the Delisio Grilled Jalapeño Poppers where the chips flank the venison ragout for the savoury doughnut. Veg: Mushroom doughnut, crispy capers, jalapeño mayonnaise, mushroom truffle pâté. This dish will be paired with Man O’War Estate Island Blend or non-alcoholic Strawberry Sour
      • Dessert: Vanilla parmesan sponge with roast apple puree, maple bacon ice cream and toasted walnuts; fused with the Delisio Triple Cheese Souffle where the chip has been folded through the sponge and also crunched on top for a hint of savoury flavour. Veg: Vanilla parmesan sponge, parmesan custard, roast apple puree, vanilla ice cream, toasted walnuts, and crushed chips. This dish will be paired with an Apple brandy, parmesan and cider cocktail OR non-alc Ecology Gin, apple, frozen grapes, sparkling white grape juice.

      This menu has been carefully curated for event. Due to this we are unable to cater for dietary requirements that sit outside of the above menu. The menu contains gluten and dairy products.
