Chef Laura Greenfield of Field & Green brings the spirit of the Mères Lyonnaises—the legendary “Mothers of Lyon”—to life in an evening dedicated to the women who shaped Lyon’s culinary legacy. Known as the gastronomic capital of France, Lyon owes much of its reputation to these pioneering female chefs, who created a style of cuisine that marries comfort and skill, tradition and innovation.

The evening will feature a five-course menu inspired by the Mères Lyonnaises, whose influence transformed home-cooked traditions into haute cuisine. Drawing from the kitchens of silk weavers and merchants, these women cultivated a culinary approach defined by warmth, generosity, and exceptional craftsmanship. Their legacy is woven into the fabric of classic French cooking, with many earning Michelin stars and leaving an indelible mark on modern gastronomy.

Set in the charming Alma House, this dining experience pays tribute to luminaries such as Eugénie Brazier, the first chef to simultaneously hold three Michelin stars at two restaurants—a record unbroken for six decades. Wellington's own award winning chef Laura Greenfield will reinterpret their dishes with her signature flair, infusing them with Field & Green’s ethos of genuine hospitality and culinary excellence.

Each course will be a celebration of the Mères Lyonnaises’ artistry, highlighting the timeless techniques and flavours that continue to inspire chefs today. Guests can expect an evening of evocative storytelling through food, complemented by a thoughtful selection of beverages that enhance the menu’s Lyonnaise roots.
